Middle Eye Bacon
Middle Eye bacon is a leaner slice of bacon cut from the middle loin of the pig with the belly and rind removed. It is a premium cut best cooked in a medium hot pan or under a hot grill and is an ideal size for homemade Eggs Benedict, or served as a whole rasher for a weekend brunch. Hellers Middle Eye Bacon is cured and manuka smoked to give it that distinctive flavour and yet it’s great value and a real winner with the whole family.
Under the grill: place bacon on grill tray below heat for approx. 3-4 minutes each side.
In the frying pan: brown bacon for approx. 10 minutes at a medium heat turning frequently.
In the oven: heat oven to 200ºC. Bake bacon for 12-18 minutes, no turning necessary.
