• Pulled Pork Baked Potato with Smokey Cheddar - Serves 4

    Ingredients:Instructions:

    180g Pack of Hellers Pulled Pork
    4 large scrubbed Potatoes
    1½ cups of grated Smoked Cheddar
    2 finely sliced Spring Onions
    A handful of chopped Italian Parsley
    120g of Sour Cream

    In a hot oven bake the potatoes till tender and the skins are brown and crackly to touch. Once cool enough to handle but still hot, cut a lid out of the top and scoop out the cooked potato and transfer it to a bowl.

    Heat the pulled pork gently in the microwave till hot then fold it through the cooked potato. Put a few spring onions, some chopped parsley and the half cup of smoked cheddar aside for later. Fold the rest of the spring onions, parsley and smoked cheddar through the cooked potato mix, season to taste.

    On the baking tray spoon the pulled pork-potato mixture back into the potato skins piling it up on the top. Sprinkle with the remaining smoked cheddar and pop them back in the oven for a further 5-10 mins till the cheese is golden. Finish with a dollop of sour cream and garnish with spring onions and parsley.

  • Pulled Pork Bun with Apple Slaw - Serves 4

    Ingredients:Instructions:

    2 x 180g packs of Hellers Pulled Pork
    4 Sesame Seed Buns
    BBQ Mayo
    6 heaped tbsp Best Foods Mayo
    4 tbsp BBQ Sauce
    ½ tbsp Dijon Mustard
    ¼ tsp Cumin Powder
    Apple Slaw
    ¼ Red and White Cabbage shredded
    2 Granny Smith Apples grated
    2 Spring Onions finely sliced
    1 tbsp each of Toasted Sesame and Fennel Seeds
    1 small handful of chopped Mint Leaves
    Apple Cider Dressing or a Vinaigrette

    Place all the bbq mayo ingredients into a bowl and mix well together.

    Place all the ingredients for the apple slaw into a bowl, add the apple cider dressing then season and toss together well.

    In a small saucepan or microwave gently heat Hellers pulled pork thoroughly until hot and keep covered ready for use.

    Start assembling the pulled pork buns by spreading the bbq mayo generously onto the lid and base of each bun. Top each bun base with hot pulled pork. Top with the apple slaw, pop the bun lids on and eat immediately!

  • Pulled Pork, Smoked Havarti and Spinach Pizza - Serves 2-4

    Ingredients:Instructions:

    1 Thin Crust Pizza Base
    90g approx. Hellers Pulled Pork
    2-3 handfuls Smoked Havarti Cheese
    2 handfuls Spinach Leaves
    ¼ Red Onion thinly sliced
    Sea Salt and Cracked Pepper
    Extra Virgin Olive Oil

    Start by preheating your oven and oven tray as high as your oven will go around 250°C plus.

    Onto your pizza base sprinkle the grated smoked havarti cheese evenly andtop with sliced red onion and spinach leaves. Place the Hellers pulled pork in little mounds over and around the spinach leaving small gaps here and there. Finish by seasoning with sea salt and cracked pepper.

    Place directly onto the very hot oven tray and cook till the cheese is melted and golden and the base is crispy [approx. 6-8 mins].

  • Mexican Pulled Pork Pies - Makes 9-10

    Ingredients:Instructions:

    2 x 180g pack Hellers Pulled Pork
    10 sheets of ready rolled Flaky Pastry
    2 tins Black Beans in spicy sauce
    ½ Red Onion diced
    1 clove Garlic finely chopped
    1 tsp Cumin Seeds
    Chilli Flakes to taste
    2 handfuls Coriander Leaves chopped
    2 Spring Onions finely sliced
    1 punnet of small Tomatoes (quartered)
    150g Sour Cream
    1 Egg whisked for brushing pastry
    Sesame Seeds and Olive Oil

    Preheat fan oven to 200°C. Spray your large muffin tins well and cut your pastry tops and bottoms to fit.

    For the filling, cook the red onions in a little oil. Gently sweat for 5 mins then add the garlic, chilli flakes and cumin seeds for a further 2 mins. Add the black beans and bring to a gentle simmer. Add the pulled pork, tomatoes and spring onions. Simmer for 5 minutes (add more chilli flakes and seasoning to taste). Fold through the fresh coriander and ladle into each pastry case filling it almost to the top. Add a large dollop of sour cream into each pie, place the lid on and secure by folding the edges neatly over and around the lid. Brush with egg and sprinkle with sesame seeds. Bake for approx. 35-40 mins or until the pastry is golden and the filling is starting to bubble up out of any cracks around the edge.

  • Pulled Pork Soft Shell Taco with Pickled Pineapple - Serves 4

    Ingredients:Instructions:

    2 x 180g packs of Hellers Pulled Pork
    8 small Soft Shell Tacos
    ¾ cup Corn Kernels (rinsed)
    ½ fresh Pineapple or a small tin of Pineapple Chunks
    ¼ Red Onion finely sliced
    1 Lime
    ¼ Red Cabbage finely sliced
    150g Sour Cream
    1-2 Tbsp Chipotle Peppers in Adobe Sauce (to taste)
    2 handfuls Coriander Leaves chopped
    1 handful Mint leaves chopped
    1 Spring Onion finely sliced

    Peel, core and slice the pineapple into small batons then place into a bowl along with the red onion, coriander and mint. Squeeze over the lime, add a pinch of sea salt and toss them well together then set aside for at least 30mins.

    Fold the roughly chopped chipotle peppers plus a little sauce from the can through the sour cream; be careful not to over fold it. Taste and add more chipotle peppers if you want it hotter. Chargrill corn till slightly blackened and in a small saucepan or microwave gently heat Hellers pulled pork thoroughly until hot. Keep covered ready for use.

    Warm the tacos and start with spreading a spoonful of pulled pork along the centre of the taco. Top with red cabbage, corn and the pickled pineapple. Finish with a dollop of chipotle cream, coriander and spring onions.
