Bacon Lattice Pie

Bacon Lattice Pie

Ingredients

  • 10 rashers Hellers Streaky Bacon
  • 2 sheets frozen puff pastry, defrosted
  • 10 eggs
  • 250g crème fraîche, room temperature
  • 1 cup baby spinach, roughly chopped
  • 150g cherry tomatoes, halved
  • ½ cup grated cheese
  • 1 spring onion, thinly sliced
  • tomato relish

Method

  1. Preheat your oven to 180°C fan bake. Line a greased pie dish with the puff pastry
  2. Whisk together eggs and crème fraîche until well combined. Season with salt and pepper
  3. Add spinach, tomatoes, cheese and spring onion. Stir to combine then pour into the pastry lined pie dish
  4. Place in the oven to bake for 20 - 25mins or until the egg mixture is mostly set
  5. Remove from the oven and increase the oven temperature to 200°C
  6. Arrange the Hellers Streaky Bacon on top of the pie in a lattice pattern
  7. Bake for a further 15 - 20mins or until the bacon is crispy and the pie is cooked through, covering with foil if the edges brown too quickly
  8. Allow to rest for 5 mins before slicing and serving with tomato relish
