Ol’ Smokey, Jalapeno and Smoked Cheddar Quesadillas

Yield: Serves 2 - 4
Start by frying off Hellers Ol Smokey till golden then chop roughly into small pieces, set aside.
Spray a medium size non-stick fry pan with olive oil and place onto high heat.
Place a 20cm size tortilla onto a wooden board and sprinkle the surface with half the grated cheese mixture, the chopped Ol’ Smokey, chopped jalapenos, corn kernels and half the parsley and spring onion mixture. Finally sprinkle the remaining grated cheese and dollop the sour cream randomly all over. Top with the second tortilla.
Carefully transfer into the hot fry pan until the bottom tortilla has browned and the cheese is melting. Spray the top tortilla lightly with olive oil and carefully turn the pizza over, cooking till browned and the filling is piping hot – should take 6-8 mins in total.
Transfer to a wooden cutting board and cut like a pizza. Top with a more sour cream and parsley spring onion mixture.

- Large 20cm round tortillas
- 1 cup mixture of grated mozzarella and smoked cheese
- 3 slices Hellers Ol’Smokey Bacon
- 4 slices Jalapenos chopped [more if you like it hot!]
- 4 tbsp sour cream
- 1/2 cup mixture of flat leaf parsley and spring onions
- 1/3 cup corn kernels
- Olive oil spray
