Mexican Mince Burrito Bowls

What you will need

  • 1 pack Hellers Mexican Mince
  • ¼ small iceberg lettuce, sliced (about 2 cups)
  • 1 carrot, grated
  • 1 pack pre-cooked rice
  • ¼ red onion, sliced
  • 1 tomato, diced
  • ½ red capsicum, diced
  • ½ cup cheese, grated
  • 2 Tbsp sour cream
  • 2 Tbsp chopped coriander
  • 4 Tbsp Guacamole – half an avocado mashed with a squeeze of lime and salt hot sauce (optional)

Instructions

  1. Place the mince in a saucepan, and heat until hot – about 3-5 minutes. Heat rice to pack instructions, and prepare the vegetables.
  2. Add the lettuce, carrot and rice to two bowls. Add in the hot mince and top with onion, tomato and capsicum, grated cheese, sour cream, coriander, guacamole and hot sauce. Serves 2
