Cottage Pie
Ok, so hear us out…making mash potato from scratch is how we prefer to eat it…but for many of us midweek this is now in the too hard basket…so we have discovered a simple mash solution along with our Base Mince recipe making this dish so quick and easy!
5 mins
Ingredients
- 700g-1kg Hellers Base Mince recipe
- 1 cup frozen peas
- ½ cup corn kernels
- I pack of Cinderella potato flakes or leftover mashed potato
- Full cream milk
- Garlic butter
- Small bunch Italian parsley leaves finely chopped
- Small bunch chives finely chopped
- Seasoning
- I cup grated cheese + 1/2 cup to sprinkle on top of the mash
Method
- Preheat oven 200C and grease a large deep sided oven proof dish with butter
- Heat the basic mince in a large pot, bring to a simmer and add the peas and corn. Allow to simmer 3-4 mins then pour straight into the greased dish
- To make the Cinderella mash potato follow the pack instructions using the whole packet with garlic butter instead of plain butter. Once it has absorbed the milk and butter as per instructions fold through the fresh herbs and 1 cup of grated cheese
- Spread the mash potato mixture roughly over the heated mince, sprinkle with cheese and bake in the oven until bubbling on the edges and the mash is golden brown
- Allow to cool for 5 minutes and serve with a side of green vegetables and warm crusty bread
