Ingredients
- 6 each London Pride sausages
- 75g butter
- 4 tbsp rice bran oil
- 1 white onion medium dice
- 3 garlic cloves finely diced
- 250g Swiss brown mushrooms halved and thinly sliced
- 1 parsnip peeled and cut into thin short strips
- 8 yams sliced into thin rounds
- 2 apples peeled, deseeded and sliced into crescents
- 2 bay leaves
- 4 fresh thyme sprigs
- ½ cup plain flour
- 1L chicken stock - low salt - heated
- 1 cup peas
- ½ lemon zested
- Sea salt and cracked pepper
- 1 quantity of mash potato for 6 people
- Freshly chopped Italian parsley
