Ingredients

  • 6 each London Pride sausages
  • 75g butter
  • 4 tbsp rice bran oil
  • 1 white onion medium dice
  • 3 garlic cloves finely diced
  • 250g Swiss brown mushrooms halved and thinly sliced
  • 1 parsnip peeled and cut into thin short strips
  • 8 yams sliced into thin rounds
  • 2 apples peeled, deseeded and sliced into crescents
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • ½ cup plain flour
  • 1L chicken stock - low salt - heated
  • 1 cup peas
  • ½ lemon zested
  • Sea salt and cracked pepper
  • 1 quantity of mash potato for 6 people
  • Freshly chopped Italian parsley
