Hawaiian Fried Rice

Ingredients

  • 125g Hellers streaky bacon roughly chopped
  • 1 small white onion peeled and chopped
  • 1 red pepper seeded and chopped
  • 3 large eggs lightly beaten
  • 3 cups rice cooked
  • 1 cup canned drained or fresh pineapple roughly chopped
  • 1 tbsp sesame oil + 3 tbsp soy sauce combined
  • 2 spring onions finely chopped
  • 2 tbsp cooking oil
  • To Serve:
  • 2 spring onions finely chopped
  • Value Tip: if red peppers are expensive and out of season then buy a jar of roasted red peppers. Use 2 peppers, pat dry and roughly chop. Add at the same time as the rice and pineapple

Method

  1. Preheat a large fry pan or wok to medium heat. Add cooking oil, bacon, onion, and red pepper and fry until tender

  2. Slide the <a href="/product/streaky-bacon">bacon</a>, onion, and red bell pepper to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the bacon mix

  3. Add the rice and pineapple and fry for a few minutes

  4. Stir the soy sauce and sesame oil mixture through for a minute

  5. Place into serving bowls and garnish with spring onions
