- If you have a beer fridge (and it has any room in it at that time of the year!) this is an ideal way of storing your Christmas ham as you don’t tend to open it as much as your everyday fridge so it keeps it cooler and isolated from other foods in your fridge
- Todd Heller's top tip is NOT to put your Christmas ham in a muslin bag or cover it, as you don't want to create extra moisture that will eventually spoil the ham. Keeping it unwrapped in the fridge does mean you might get a small amount of dryness where the last piece was cut but just remove a thin slice and it is as good as new.
- If not having your Christmas ham covered is something you struggle with, then a clean dry tea towel large enough to drape over the top of the ham is a good idea but you need to change it regularly.
- By removing the hock to use in soups or stocks you can cut your leftover Christmas ham into manageable pieces and freeze it down in freezer bags, clearly labelled and dated for future use. A Christmas ham should last up to 2 weeks in your fridge.
- To freeze place the Christmas ham into snap lock bags, clearly label and date and it will keep up to 3 months in the freezer. To thaw place the ham in the fridge overnight to allow it to defrost gently to maintain its structural integrity as much as possible.
