Ingredients
- 500g unsalted butter, softened
- 250g pack Hellers Honey Cured Streaky Bacon
- 2 cloves garlic unpeeled
- 1/4 cup Parmesan powder
- 1 tbsp maple syrup
- ½ tsp sea salt
- 15g chives finely chopped
Method
- Place the softened butter into a large bowl
- In a small fry pan, heat the unpeeled garlic cloves over medium heat until they just start to brown, about 6 minutes. Turnover and continue cooking until the garlic have softened, about 10 minutes total. When the garlic cloves are cool enough to handle, remove the skin and chop the garlic finely then place into a large bowl
- Grill bacon on both sides until crispy and golden, remove to a board and finely chop then place into the bowl. Pour any excess bacon fat left on the grill tray into the bowl as this adds amazing flavour
- Add parmesan powder, maple syrup, sea salt and chives and fold together well with a spatula or wooden spoon until the flavoured butter looks even. At this stage if you want a smoother finer butter then pulse all the ingredients together in a food processor until blended
- This makes about 2.5 cups so you will have plenty for different uses see below for inspiration
- Keep in the fridge in a sealed container for up to a week or place small quantities onto greaseproof paper and roll up twisting the ends like a lolly wrapper. Freeze portions this way and grab from the freezer and use as needed
