Best Cheese and Bacon Scones

This recipe originated from the legendary Federal Deli in Wanaka – we have elevated it with the addition of our Crafty Cooks Bacon Strips and fresh chives…seriously next level scones!

Best Cheese and Bacon Scones

Ingredients

  • 500g tasty cheese grated + 100g for sprinkling on top of scones
  • 600g buttermilk
  • 100g Hellers Crafty Cooks Bacon Strips + 50g for sprinkling on top of scones
  • 1 small bunch fresh chives finely chopped
  • 1/2 tsp salt
  • 800g self rising flour

Method

  1. Preheat oven 200C
  2. Into a large bowl add the cheese, buttermilk, bacon strips, chives and salt. Using a spatula or your hand mix together
  3. Sift in the flour. Using your hand mix until the dough just comes together and then place onto a clean flat surface. IMPORTANT SCONE TIP: Do Not Overmix the Dough!
  4. Flatten it out roughly and cut into 12-14 pieces
  5. Transfer to a lined baking tray
  6. Top with bacon strips and cheese
  7. Place in the hot oven and cook until golden approx. 25-30 mins
  8. Serve immediately with fresh soft butter, extra chopped chives and sea salt for garnish
These scones are meant to be dense and packed with flavour. They are excellent sliced in half and toasted straight in the toaster the next day if you have any leftovers!
