Ingredients
- 500g tasty cheese grated + 100g for sprinkling on top of scones
- 600g buttermilk
- 100g Hellers Crafty Cooks Bacon Strips + 50g for sprinkling on top of scones
- 1 small bunch fresh chives finely chopped
- 1/2 tsp salt
- 800g self rising flour
Method
- Preheat oven 200C
- Into a large bowl add the cheese, buttermilk, bacon strips, chives and salt. Using a spatula or your hand mix together
- Sift in the flour. Using your hand mix until the dough just comes together and then place onto a clean flat surface. IMPORTANT SCONE TIP: Do Not Overmix the Dough!
- Flatten it out roughly and cut into 12-14 pieces
- Transfer to a lined baking tray
- Top with bacon strips and cheese
- Place in the hot oven and cook until golden approx. 25-30 mins
- Serve immediately with fresh soft butter, extra chopped chives and sea salt for garnish
