Ingredients
- 8 rashers Hellers Bacon we recommend streaky or middle eye
- 2 tomatoes, sliced
- 1 avocado, sliced
- 2-3 lettuce leaves
- Mayonnaise or Aioli
- 4 slices thick cut artisan bread
- Sea salt and cracked pepper to taste
- To serve:
- Baby cornichons or dill pickles
Method
- Grill, pan fry or BBQ bacon until crispy
- If you are feeling indulgent, then fry the outside of the bread slices in the leftover bacon fat
- To assemble spread the slices of bread with mayo, top with lettuce, tomato, avocado and bacon. Top with remaining slice of bread and to make it easier to eat secure with a toothpick
- Serve with a side of pickles or add them straight in if you prefer
