Breakfast Sausage Burger
Burgers are a kiwi staple food these days and here at Hellers we love nothing more than eating the at every meal occasion! So here is a delicious take on a breakfast brioche burger that is so quick and easy and delivers on flavour!

INGREDIENTS
- 1 x 480g pack Hellers Country Pork sausages
- 4 x brioche burger buns
- 8 x whole eggs cracked into a bowl and whisked together, add seasoning
- 6 Fresh chives cut with scissors to add into the egg mix
- 4 x slices of cheddar
- 4 x large sliced gherkins we recommend Delmaine - plus more if desired
- Ploughman's or caramelised onion style chutney for spreading
- Butter - must be the real deal!
- Serve with fried potatoes if desired
- Butter the inside top and bottom of each brioche bun....yes this is an important step! Set aside [do not close them together as they will stick] as you are going to fry them in the pan after the patties
- Remove the sausage meat from the casings into a bowl and form 4 balls - use wet hands to help with the stickiness. Between your hands press the balls of sausage meat out to create a roughly shaped flat burger patty
- Place the sausage patties into a fry pan with a little oil and fry over medium heat allowing each side to caramelise. If you have a lid pop it on as it speeds up this process. Fry until thoroughly cooked through then sit the burgers aside covered to keep warm for a few minutes
- Wipe the pan out with a paper towel, place the buttered side down brioche buns into the pan and fry over medium - low heat until golden. It is vital you don't walk away from the fry pan at this stage as they caramelise quickly due to the sugar in the buns - so stay and watch and repeat with remaining buttered buns. Set aside to keep warm while you cook the final step
- In the same fry pan add another dash of oil or butter / ghee and once it reaches medium heat pour in the egg and chive mixture. Allow the eggs to move around a little with your spatula then finish by leaving the eggs to 'just set' across the whole fry pan - remove from heat and portion into 4 like you would a pizza
- To assemble spread the bottom of the brioche bun with chutney, top with the sausage patty and a slice of cheese, now the egg and finally the large slice of gherkin. Pop on the top and eat immediately!
