Bruschetta with roasted nectarines, ham & buffalo mozzarella

Peach Maple & Mustard Glazed Ham


  • 6 nectarines
  • Brown sugar
  • Lemon or verjuice
  • 3 slices sourdough bread
  • Buffalo mozzarella
  • Leftover Hellers ham


  1. Preheat your oven to 160C and line a tray with baking paper. Cut 6 nectarines in half and remove the cores, place cut side up on the tray. Sprinkle lightly with brown sugar, a squeeze of lemon or verjuice and bake till soft and they start to caramelise.
  2. Grill on the bbq over medium flame 3 generous slices of sour dough bread till both sides have distinct chargrilled marks. Remove and lightly rub one side with peeled garlic, season and drizzle with olive oil.
  3. Top with 2-3 slices of buffalo mozzarella, 2 roasted nectarine halves, leftover Hellers Christmas ham cut into fine strips and some torn fresh tarragon leaves.
