Cheesy Bacon Jacket Potatoes

These stuffed spuds feature Heller’s streaky bacon, creamy cheese, and chives for a crowd-pleasing dish. Perfect solo or paired with salad, they’re a savoury sensation!

Cheesy Bacon Jacket Potatoes

Ingredients

  • 6 baking potatoes
  • 1 small onion finely chopped
  • 100g Hellers Streaky Bacon finely chopped
  • 1 garlic clove finely chopped
  • 125g cream cheese
  • 15g chives finely chopped
  • 1 cup mature cheddar + extra for top
  • Olive oil

Method

  1. Preheat the oven to 180C. Prick the potatoes all over with a fork and cook in the microwave on high for 15 minutes until tender. Let the potatoes cool a little, then slice off the top and scoop out the centre into large mixing bowl. If you don’t have a microwave, then bake in the oven until tender approx. 40 mins
  2. In a medium frying pan, heat a glug of oil and fry the onion over a medium heat for 5 minutes. Add the bacon and fry for a further 5 minutes until turning golden. Add the garlic for a few minutes until the bacon is crisp
  3. Add the bacon mixture to the bowl with the potato, add the cream cheese and chives and mash everything together. Season to taste and spoon into the potato skins, you can pile up the potato mixture and then top with cheese. Place them onto a lined baking tray
  4. Toss the potato lids you cut off in a little oil and sea salt and place them on the tray too, they crisp up and are delicious
  5. Bake in the oven for 20 minutes until the cheese is turning golden
  6. Serve with a big green garden salad or your favourite winter vegetables. They are just as good on their own with your favourite chutney or sauce
Tip: Precook the potatoes up to 24 hours in advance, leave to cool, then wrap in cling film and store in the fridge
