Chicken and Roast Kumara Salad

A simple and healthy lunchbox filler for everyone in the family – keep things easy by roasting the kumara the night before!

Chicken and Roast Kumara Salad

Ingredients

  • 1 kumara washed and cut into thin rounds
  • ¼ cos lettuce roughly chopped
  • ¼ pack Hellers Chipotle Chicken Sliced
  • ¼ cup corn kernels
  • 4 cherry tomatoes halved
  • ½ avocado peeled and chopped
  • Olive oil
  • Sea salt
  • Dressing of your choice on the side in a separate container

Method

  1. Preheat oven 180C
  2. Drizzle olive oil onto a lined baking tray and toss the kumara slices in it. Sprinkle wit sea salt and bake in the oven for 15-20 mins until tender and caramelised
  3. Place all remaining ingredients including chipotle chicken slices into your lunchbox and top with kumara slices once they are cooled
  4. Pack your lunchbox with your favourite dressing in a separate container and then simply drizzle it over when you are ready to eat
