Chipotle Chicken Quesadillas with Coriander Black Beans & Lime
A great tasting quesadilla, using our Shredded Chipotle Chicken, that is so quick and easy to make

Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 1 carrot, grated
- 1 tin black beans, drained
- 1 egg, beaten
- ¼ cup sour cream
- 1 packet Hellers chipotle chicken chunks, chopped
- 2 - 4 tbsp coriander, chopped
- 1 lime, zested and juiced
- 200g grated cheese - Tex Mex blend is great
- Salt and pepper
- 4 - 6 large tortillas – depending on size
Sauté the oil, onion and carrot in a fry pan until soft. Add in the drained black beans and mash slightly with a wooden spoon. Set aside to cool slightly.
Add in the egg, sour cream, <a href="/product/shredded-chipotle-chicken">chipotle chicken chunks</a>, coriander, lime, and cheese. Season and stir to combine.
Lay out the tortillas and spread the filling on one half of the tortilla and fold over to seal. Repeat until all the filling is used up.
Heat a little oil in a large frypan, and cook the quesadillas one at a time until golden on each side, have puffed up slightly and the filling is hot.
Serve with sour cream, coriander, avocado, hot sauce and any of your favourite Mexican sides.
