Chipotle Chicken Quesadillas with Coriander Black Beans & Lime
A great tasting quesadilla, using our Shredded Chipotle Chicken, that is so quick and easy to make

Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 1 carrot, grated
- 1 tin black beans, drained
- 1 egg, beaten
- ¼ cup sour cream
- 1 packet Hellers chipotle chicken chunks, chopped
- 2 - 4 tbsp coriander, chopped
- 1 lime, zested and juiced
- 200g grated cheese - Tex Mex blend is great
- Salt and pepper
- 4 - 6 large tortillas – depending on size
- Sauté the oil, onion and carrot in a fry pan until soft. Add in the drained black beans and mash slightly with a wooden spoon. Set aside to cool slightly.
- Add in the egg, sour cream, chipotle chicken chunks, coriander, lime, and cheese. Season and stir to combine.
- Lay out the tortillas and spread the filling on one half of the tortilla and fold over to seal. Repeat until all the filling is used up.
- Heat a little oil in a large frypan, and cook the quesadillas one at a time until golden on each side, have puffed up slightly and the filling is hot.
- Serve with sour cream, coriander, avocado, hot sauce and any of your favourite Mexican sides.
