South American Spicy Sausage Baguette with Tomato Salsa

Ingredients
- 1 pack Hellers Smokey Spicy Brats
- 1 T oil
- 1 long baguette stick
- 4 T mayonnaise
- Tomato Salsa: 3 small tomatoes - diced, ½ red onion - finely chopped, 1 clove garlic - crushed, 4 T chopped parsley, 1 T red wine vinegar, 1 T olive oil, salt & pepper
Chorizo: Heat a fry pan over a medium heat with the oil, and cook the chorizo <a href="/product/spicy-brats">sausages</a> for about 10 minutes or until brown and hot through.
Tomato salsa: Mix everything together in a bowl, and season to taste.
To serve: Warm the rolls or ciabatta stick in a low oven for 5 minutes to warm through. Split the long roll or individual rolls down the middle, and spread with the mayo and half of the salsa. Top with the cooked chorizo sausages, and more salsa and extra mayo to finish. Serve immediately with plenty of napkins! Makes 5 rolls or one long one.
