South American Style Chorizo Roll with Tomato Salsa
What you will need
- 1 pack Hellers chorizo sausages
- 1 T oil
- 1 long ciabatta stick or 5 individual ones
- 4 T mayonnaise
- Tomato Salsa: 3 small tomatoes - diced, ½ red onion - finely chopped, 1 clove garlic - crushed, 4 T chopped parsley, 1 T red wine vinegar, 1 T olive oil, salt & pepper
Heat a fry pan over a medium heat with the oil, and cook the chorizo sausages for about 10 minutes or until brown and hot through.
- Tomato salsa:
Mix everything together in a bowl, and season to taste.
- To serve:
Warm the rolls or ciabatta stick in a low oven for 5 minutes to warm through. Split the long roll or individual rolls down the middle, and spread with the mayo and half of the salsa.
Top with the cooked chorizo sausages, and more salsa and extra mayo to finish. Serve immediately with plenty of napkins! Makes 5 rolls or one long one.
