Ingredients

  • 200g pack Hellers Pastrami
  • 4 slices of rye bread
  • 4 slices Swiss cheese
  • 1 cup sauerkraut – squeeze out excess brine
  • 1 cup Thousand Island dressing + extra for serving
  • Dill pickles for serving
  • Butter
  • Large toothpicks

Method

  1. Preheat grill

  2. For the sandwich build:

  3. Combine half of the dressing with the sauerkraut

  4. Spread the remaining dressing onto all 4 slices of bread and then place one slice of cheese onto 2 slices of bread

  5. Onto the other 2 slices of bread pile the meat high, then add the sauerkraut and finally top with a slice of cheese. Then grill all 4 slices of bread until the cheese has melted

  6. Assemble the top and bottom to make 2 sandwiches and butter the outside on both sides

  7. Heat a heavy-bottomed non-stick skillet over medium-low heat. Add the sandwiches, and fry until golden about 3 minutes. Flip, and fry again until golden, another 3 minutes

  8. To make it easier secure the sandwich with a large toothpick and pop a few dill pickles on top as you do so

  9. Serve with extra dressing and sliced gherkins on the side
