Detroit Style Pizza

This is a delicious, quick and simple version of the thick crusted traditional 24 -hour fermented Detroit style pizza. This will only take 2-3 hours and topped with Hellers Pizza Combo it is worth the wait!

Detroit Style Pizza

Ingredients

  • Pizza Dough:
  • olive oil to grease the pan and to help stretch the dough
  • 270g standard flour
  • 1 tsp dried instant yeast
  • 1.5 tsp salt
  • 3/4 cup warm water
  • 9 x 13 roasting pan
  • Pizza Topping:
  • 1/2 cup favourite pizza sauce
  • 200g grated pizza cheese
  • 100g cubed mozzarella
  • 1 x twin pack [175g] Hellers Crafty Cooks Pizza Combo
  • To Serve:
  • Fresh basil
  • Hot Honey - add a few drops of tabasco sauce to 1/2 cup runny honey and heat in microwave till warm, drizzle over the pizza to serve

Instructions

  1. Pizza Dough Steps:
  2. Grease the roasting pan with 3 tbsp olive oil, you need a little extra in there for the dimpling and stretching stage so don't skimp on the oil!
  3. Start by making the dough by mixing together the flour, salt and instant yeast in a medium bowl. Pour in the warm water and 1 tablespoon olive oil and mix again using an oiled hand. It is expected that the dough will be quite sticky and wet at this stage. Knead it in against the sides of the bowl until it comes together and feels smooth and cohesive.
  4. Transfer the dough to the oiled roasting pan. Dip the ends of your fingers into the oil and gently dimple the dough. Cover the pan with a clean tea towel and leave the dough in a warm place for 15 mins - set a timer so you don't forget as you will repeat this process 2 x.
  5. After 15 mins gently dimple it again so that you are slowly stretching it towards the edges of the pan without ripping the dough. Cover and leave again for a further 15 mins.
  6. Now you have reached the final dimpling and stretch process it should reach the sides of the pan, use the olive oil as needed. This is the last rise and it takes 1 hour so cover and leave it in a warm place - set the timer
  7. Assemble and Bake:
  8. Preheat your oven at its hottest setting
  9. Uncover the dough and spread the pizza sauce on top of the pizza dough, smoothing it out right until it reaches the edges
  10. Sprinkle with grated pizza cheese right to the edge
  11. Sprinkle over Pizza Combo
  12. Top with cubes of mozzarella near the edges and a few in the middle
  13. Bake in the oven for 6 mins then turn the pan 180 degrees and cook a further 7-8 mins until the top is golden and the cheese and toppings are bubbling and crispy
  14. Allow to cool for a few mins then cut with a knife into squares and garnish with fresh basil
