Bacon Butter on Crumpets

Bacon Butter on Crumpets

What you will need

  • 250g Hellers Danish Streaky Bacon finely chopped
  • 500g soft butter
  • 3 tbsp maple syrup
  • ½ tsp sweet smoked Spanish paprika
  • 2 tbsp chives finely chopped
  • Cracked pepper

Instructions

  1. In a large fry pan over medium heat cook the bacon for approx. 7 mins to render the fat. Remove from heat and allow it to cool.
  2. In a medium bowl add the butter, maple syrup, paprika, chives and a couple of twists of cracked pepper. Once cool enough add the cooked bacon and mix thoroughly.
  3. Take a large sheet of baking paper and spread the bacon butter from one edge to the other. Fold the baking paper over and twist up the ends to form a tight roll. Wrap this in food wrap and refrigerate or freeze.
  4. Alternatively you can make 2 small rolls and keep one in the fridge – slicing off bacon butter as you need it – and the other can go into the freezer.
