French Toast with Bacon and Blueberry Maple Syrup

French Toast with Streaky Bacon and Blueberry Maple Syrup

INGREDIENTS

  • 4 eggs
  • 2 T sugar
  • ½ cup sour cream or cream
  • ½ cup milk
  • 1 tsp cinnamon
  • 8 thick slices of white bread or brioche or your favourite bread – slightly older bread works better there than fresh bread
  • butter for cooking the French toast
  • 500g Hellers Streaky Bacon to serve
  • icing sugar
  • 1 cup frozen blueberries
  • ½ cup maple syrup
  • 1 tsp lemon juice

METHOD

  1. Blueberry Maple Syrup: Place the blueberries and maple syrup in a small saucepan, bring to the boil and simmer for 1 minute. Remove from the heat and stir in the lemon juice.
  2. French Toast: Whisk the eggs, sugar, sour cream or cream, and cinnamon together in a large low bowl.
  3. Heat a large fry pan over a medium heat and add some butter to melt.
  4. Dip a couple of slices of bread at time into the egg mixture, and coat on both sides. Cook the bread in the fry pan, until golden on each side. Set aside to keep warm, and repeat with the remaining bread.
  5. Meanwhile, cook the bacon to your liking.
To Assemble Top the French Toast with the bacon, spoon over the blueberry maple syrup, and sprinkle with icing sugar. Serve immediately. Serves 4
