What you will need
- Salad: 1 small cos lettuce, 2 cups rocket, 350g Hellers honey baked ham or leftover Christmas ham, 600 - 800g new potatoes - halved, 100g creamy blue cheese, fresh herbs
- Honey walnuts: 70g walnuts, 1 1⁄2 T honey, 1⁄2 T butter, pinch salt
- Grainy mustard dressing: 1 1⁄2 T olive oil, 1 T grainy mustard, 1 1⁄2 T wine vinegar, 1⁄2 tsp honey
Instructions
- Salad: Cook the new potatoes (boiled or roasted), and toss with half the dressing.
- Dressing: Whisk all ingredients together in a bowl.
- Honey walnuts: Place the walnuts on a baking tray and toast the walnuts in a 160°C oven for 15 minutes or until lightly toasted.
- Heat the butter and honey in a small saucepan over a medium heat. When bubbling, add the toasted walnuts and stir until the honey is caramelised – about 2 - 3 minutes. Tip the walnut mixture on to a piece of baking paper and cool. Break up or chop the set mixture when ready to serve.
- To serve: Arrange the lettuce and rocket on a large serving platter and top with the ham, potatoes, blue cheese and walnuts. Drizzle over the other half of the dressing and top with fresh herbs if desired. Serves 4
