Hawaiian Fried Rice

Ingredients

  • 125g Hellers streaky bacon roughly chopped
  • 1 small white onion peeled and chopped
  • 1 red pepper seeded and chopped
  • 3 large eggs lightly beaten
  • 3 cups rice cooked
  • 1 cup canned drained or fresh pineapple roughly chopped
  • 1 tbsp sesame oil + 3 tbsp soy sauce combined
  • 2 spring onions finely chopped
  • 2 tbsp cooking oil
  • To Serve:
  • 2 spring onions finely chopped
  • Value Tip: if red peppers are expensive and out of season then buy a jar of roasted red peppers. Use 2 peppers, pat dry and roughly chop. Add at the same time as the rice and pineapple

Method

  1. Preheat a large fry pan or wok to medium heat. Add cooking oil, bacon, onion, and red pepper and fry until tender
  2. Slide the bacon, onion, and red bell pepper to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the bacon mix
  3. Add the rice and pineapple and fry for a few minutes
  4. Stir the soy sauce and sesame oil mixture through for a minute
  5. Place into serving bowls and garnish with spring onions
