Hellers Base Mince Recipe

Here at Hellers we are all about making life easier for you at home and this recipe is a serious game changer! This is what we like to call a base  recipe because you can make it in bulk, freeze it down and then use it for so many different dishes. Simply add a few ingredients to the base recipe and boom you have a new dish…cottage pie, lasagna, nachos…spag bol the list is endless!

Ingredients

  • 2 x 380g of Hellers Beef Mince (you can use Hellers Pork Mince if preferred or 50/50 Beef & Pork)
  • 2 tbsp oil
  • 1/2 white onion peeled and finely diced
  • 1 garlic clove crushed
  • 1 stick celery finely diced
  • 1 carrot peeled and finely diced
  • 720ml jar passata
  • 400g chopped tomatoes in puree
  • 1 tbsp tomato paste
  • 1 beef bouillon or 1tbsp beef stock powder
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 fresh stk rosemary
  • 1 head silver beet, white stalks removed, green leaved roughly chopped

Method

  1. If using a pressure/slow cooker place in oil, onion, garlic, celery and carrot and set on sauté for 5 mins then add mince, tomato paste and oregano and sauté a further 5 mins breaking up the mince lumps and stirring regularly
  2. Add beef stock, bay leaf, passata, chopped tomatoes, silver beet, seasoning and stir through
  3. Set pressure/slow cooker to Meat setting [25-30 mins for pressure cooker] and cook until ready
  4. If using a large pot sauté the oil, onion, garlic, celery and carrot over medium heat for 5 mins then add mince, tomato paste and oregano and sauté a further 5 mins breaking up the mince lumps and stirring regularly
  5. Add beef stock, bay leaf, passata, chopped tomatoes, silver beet, seasoning and stir through
  6. Gently simmer for 45 mins to allow the flavours to develop breaking up the mince and stirring regularly
  7. Once cooked and cooled slightly transfer to storage containers. We recommend using varying sized containers for different portions required for different meal ideas

  9. Spaghetti Bolognaise – add chopped sautéed red or yellow peppers, chopped fresh basil or parsley
  10. One Pot Pasta Bake – add chopped sautéed red or yellow peppers, chopped fresh basil or parsley, chopped spinach leaves
  11. Cottage Pie + Mince on Toast – add frozen peas and corn kernels
  12. Chilli con Carne – add kidney beans, nacho/taco seasoning, chopped sautéed red or yellow peppers
  13. Nachos + Tacos + Enchiladas + Quesadillas – add black beans, corn kernels, nacho/taco seasoning, chopped sautéed red or yellow peppers, jalapenos chopped, chopped fresh coriander
  14. Lasagna - chopped fresh basil or parsley or extra spinach leaves chopped
