Homegrown Lamb Sausage Pita Pockets w a Zesty Lemon Yoghurt

Old school pita pockets never go out of style! We love them rammed full of our delicious Homegrown Lamb sausages and a fresh Greek style salad, drizzled with a zesty lemon yoghurt. So easy to make any time of the day!

Homegrown Lamb Sausage Pita Pockets w a Zesty Lemon Yoghurt

Ingredients

  • 1 pack Hellers Homegrown Lamb Sausages
  • 6-8 pita pockets
  • 2 large romaine leaves roughly chopped
  • 20 olives cut in half lengthways
  • 100g feta roughly crumbled
  • 8-10 small sundried tomatoes roughly chopped
  • 1/4 red onion finely sliced
  • 1 small bunch mint leaves roughly chopped
  • 1 avocado sliced [optional]
  • Zesty Lemon Yogurt Dressing:
  • 200g plain Greek yoghurt
  • 1 lemon zested

Method

  1. To make the dressing combine the 2 ingredients and allow to sit for a minimum of 30 mins
  2. In a fry pan or on the bbq cook the sausages over medium heat until thoroughly cooked. Remove from heat and allow to sit for a few minutes to allow the juices to settle
  3. Combine all the salad ingredients together in a small bowl and toss together. Cut the sausages in half lengthways and then into smaller bite size pieces and add to the salad bowl, gently folding them through
  4. Cut the pitas across the top and warm them a little in the oven or a microwave. Gently spoon in a little lemon dressing and then the sausage and salad, finish with a drizzle of dressing on top
  5. Serve with extra dressing and lemon wedges
