Ingredients
- 6 pack lunch rolls
- 1 x 250g pack Hellers Kentucky Chicken
- 1/4 cup mayo
- Baby spinach leaves
- Salsa:
- 3 tbsp chopped pineapple [canned is fine]
- 3 tbsp corn kernels
- 2 tbsp jalapeno slices in brine drained, finely chopped
- 2 spring onions finely chopped
- 1 lime juiced
- Optional: add some crispy grilled chopped bacon
Method
- To make the salsa combine all the ingredients together and allow to macerate for a minimum of 10 mins
- Into a medium bowl add the Kentucky chicken, mayo, salsa and season with a pinch of salt and cracked pepper then fold together until well combined
- Cut the rolls in half horizontally and spread mayo on the bottom and top cut halves. Place spinach on the bottom and then spread evenly with a generous spoonful of chicken filling. Top with extra spinach leaves and finally the bun lid. Repeat until you have assembled all the rolls
- Serve onto a large serving platter or straight into the lunchbox!
