- 6 each London Pride sausages
- 2 tbsp rice bran oil
- 500g instant fine Italian polenta
- 2L full milk or water - or 50/50
- 25g butter
- ¾ cup olive oil
- 2 eggplant
- 1 tsp table salt
- 2 white onions medium dice
- 4 garlic cloves medium dice
- 3 fresh thyme sprigs
- 1 fresh rosemary stalk
- ½ tsp ground cumin
- 1 tsp fennel seeds
- ¼ tsp ground allspice
- ¼ tsp chilli flakes - reduce or omit for kid-friendly
- 500ml Italian tomato Passata
- ½ cup water
- 1 tbsp brown sugar
- 20 pitted Kalamata olives - reduce or omit for kid-friendly
- Freshly chopped parsley
- 50g shaved parmesan
