  • 6 each London Pride sausages
  • 2 tbsp rice bran oil
  • 500g instant fine Italian polenta
  • 2L full milk or water - or 50/50
  • 25g butter
  • ¾ cup olive oil
  • 2 eggplant
  • 1 tsp table salt
  • 2 white onions medium dice
  • 4 garlic cloves medium dice
  • 3 fresh thyme sprigs
  • 1 fresh rosemary stalk
  • ½ tsp ground cumin
  • 1 tsp fennel seeds
  • ¼ tsp ground allspice
  • ¼ tsp chilli flakes - reduce or omit for kid-friendly
  • 500ml Italian tomato Passata
  • ½ cup water
  • 1 tbsp brown sugar
  • 20 pitted Kalamata olives - reduce or omit for kid-friendly
  • Freshly chopped parsley
  • 50g shaved parmesan
