Meatball Curry w Vegetables

Meatballs are so versatile, did you know they are even scrumptious in your favourite curry! We created this recipe with a korma base but experiment with your favourite curry and try it with any type of Hellers meatballs.

Meatball Curry w Vegetables

Ingredients

  • 1 pack Hellers Pork Meatballs
  • 400g Korma Curry Sauce - we used Kitchen Creations
  • 200ml coconut cream
  • 8 baby carrots stalks removed or 2 large carrots peeled and cut into thumb size pieces
  • 1 kumara peeled and diced into thumb size pieces
  • 8 brocolli florets
  • 16-20 green beans
  • Almond slivers toasted [optional]
  • Ready to heat rice
  • coriander leaves
  • flatbread to serve
  • natural yogurt to serve

Method

  1. Start by browning off the meatballs in 2 tbsp of oil in a deep sided frypan over medium heat. Stir often until they are evenly brown then remove to a plate to add back into the curry later - it doesn't matter that they are not cooked all the way through at this stage as they will finishing cooking in the sauce
  2. Add the curry sauce and coconut cream to the fry pan and stir to combine over medium heat. Add the meatballs back into the pan along with the carrots and kumara. Simmer gently over medium low heat until the vegetables are tender
  3. Add the broccoli and green beans and cook several minutes until just tender
  4. Heat the rice and flat breads and set aside on the table for serving
  5. To serve place the meatball curry into a serving bowl [or serve straight from the fry pan] and garnish with almond slivers and fresh coriander. Place on the table for everyone to help themselves along with a side of natural yoghurt
