Meatballs with Gnocchi & Olives

Meatballs Gnocchi

What you will need

  • 1 pack Hellers Meatballs
  • 1 x 450g jar your favourite Pasta sauce
  • 1 Tbsp oil
  • 1 red pepper, thinly sliced
  • ½ red onion, thinly sliced
  • ½ tsp fresh thyme or oregano leaves
  • 12 green olives
  • 250g pack fresh gnocchi
  • pinch chili flakes optional
  • 2 - 4 Tbsp parmesan, grated or shaved

Instructions

  1. Heat the oil in a fry pan, and add the meatballs and gently fry for 5 mins until caramelised on the outside, remove with a slotted spoon onto a plate. To the fry pan add the red pepper and red onion and fry for 3 minutes or until soft. Now add meatballs back into the pan along with the thyme and olives allow to simmer for 5 minutes.
  2. Bring a medium pot of water up to the boil and then add the gnocchi, cook until they float to the surface – about two minutes.
  3. With a slotted spoon, scoop the gnocchi into the meatball sauce and toss gently to coat.
  4. Serve into two bowls and top with grated parmesan and chilli flakes if desired. Serves 2
