Meatballs with Gnocchi & Olives

Ingredients
- 1 pack Hellers Meatballs
- 1 x 450g jar your favourite Pasta sauce
- 1 Tbsp oil
- 1 red pepper, thinly sliced
- ½ red onion, thinly sliced
- ½ tsp fresh thyme or oregano leaves
- 12 green olives
- 250g pack fresh gnocchi
- pinch chili flakes optional
- 2 - 4 Tbsp parmesan, grated or shaved

Heat the oil in a fry pan, and add the <a href="/product/angus-meatballs">meatballs</a> and gently fry for 5 mins until caramelised on the outside, remove with a slotted spoon onto a plate. To the fry pan add the red pepper and red onion and fry for 3 minutes or until soft. Now add meatballs back into the pan along with the thyme and olives allow to simmer for 5 minutes.

Bring a medium pot of water up to the boil and then add the gnocchi, cook until they float to the surface – about two minutes.

With a slotted spoon, scoop the gnocchi into the meatball sauce and toss gently to coat.

Serve into two bowls and top with grated parmesan and chilli flakes if desired. Serves 2
