Mediterranean Kebab Wreath

Mediterranean Kebab Wreath

Ingredients

  • Hellers Shaved Pastrami
  • Hellers Salami - we used Paprika and Garlic for colour and Pepperoni
  • Medium size wooden Kebab skewers
  • Assorted olives pitted for easy skewering
  • Cherry tomatoes
  • Baby cornichons
  • Baby red peppers - peppadews
  • Marinated artichoke quarters
  • Bocconcini
  • Assorted cheeses - blue, gouda, smoked cheese...
  • Basil leaves
  • Rosemary sprigs for decoration

Method

  1. Lay the rosemary sprigs in a wreath shape on the round platter. You can adjust these as you go and add more as you need
  2. Make the kebabs by skewering various ingredients in a random fashion. Helpful hint is to start and end with something that creates a stop gap like a cherry tomato or an olive as these items stay on quite securely
  3. If you want to create beautiful meat folds on your skewers then fold each slice in half and back the opposite way in half again. Slide onto the skewer and then spread out gently to create the lovely folds
