Mexican Chunky Cheese Sausage and Bean Mix


  • 1 onion finely chopped
  • 2 tbsp oil
  • 1 red pepper deseeded, chopped into small bite size
  • 390g black beans rinsed
  • 300g whole corn kernels rinsed
  • 6 Hellers Chunky Cheese Sausages cut into small bite size chunks
  • 4 tbsp Mexican spice mix (to taste if making for kids)
  • 400g Mexican style chopped tomatoes


  1. In a medium saucepan over medium heat sweat the onions and red pepper in the oil for 8-10 mins.
  2. Add the black beans, corn, cut sausages and stir through the spice mix. Add the chopped Mexican flavoured tomatoes and bring up to a simmer for a few minutes then remove from heat
  3. Store in the fridge for 3-4 days and can be frozen for up to 3 months
How to use: - Enchiladas - - Quesadillas - Nachos - Burritos - Wraps - As a side dish with corn chips and guacamole - Stir through pasta and bake topped with cheese - Mexican lasagne using tortillas
