Oven Baked Meatballs

A great staple that can be used in so many ways – in a sub, tossed through pasta, with a side of garlic bread or oven baked tortilla crisps , steamed vegetables or a delicious bowl of cheesy polenta in the middle of winter!

Oven Baked Meatballs

Ingredients

  • 1 pack Hellers Meatballs Angus or Pork
  • 1 white onion finely chopped
  • 2 cloves garlic thinly sliced
  • 500g pasta sauce
  • 1 beef stock cube + 150ml hot water
  • 1/2 bag of baby spinach or 1 bunch of silver beet leaves only roughly chopped
  • 150g mozzarella sliced into 2 cm thick slices
  • 50g parmesan finely grated
  • Fresh basil leaves
  • To serve with - your choice:
  • Pesto garlic bread, oven baked tortilla chips, steamed vegetables, creamy polenta, pasta

Method

  1. Preheat fan oven 200C
  2. In a large deep sided fry pan add 2 tbsp oil, add meatballs and brown off for several minutes. Add the onion and sauté till tender, add the garlic for another minute and finally the spinach leaves. Add pasta sauce and the 150ml hot beef stock allow to simmer for 10 mins until the meatballs are thoroughly cooked
  3. Transfer the meatballs and sauce into an deep oven dish. Layer with slices of mozzarella and sprinkle with parmesan. Bake for 20 mins or until the cheese is golden and the sides are bubbling
  4. To serve garnish with lots of basil leaves
  5. Serve with your choice of sides as listed in the ingredients
