INGREDIENTS
- 225g macaroni pasta
- 1 onion finely chopped
- 2tbsp oil
- 1 bay leaf
- 60g butter
- 225g cream cheese
- 360g sour cream
- 1.5c tasty/cheddar cheese grated
- ½ tsp sea salt
- ½ tsp black pepper
- 1c panko breadcrumbs
- 2tbsp butter melted
- 6 Hellers Cheese and Bacon Precook Sausages roughly chopped
Instructions
- Preheat oven 180C
- Cook the pasta per the package instructions, drain then toss in a little butter and set aside to keep warm
- In a medium saucepan over medium heat gently sweat the onions with the bay leaf in the oil for 8-10 mins until tender, be careful not to burn them
- Stir the 2 tbsp of melted butter and panko breadcrumbs together in a small bowl set aside
- Add the 60g butter and the cream cheese to the onions and turn the heat down to med-low. Gently melt together for a few minutes stirring, be careful not to burn it. Add the sour cream and start whisking it until it fully combines - it will seem as if it won’t come together but once you whisk it, it will. Now add the grated cheddar and stir/whisk until melted, remove from heat as soon as it is melted so it doesn’t catch on the bottom of the pot. Season with salt and pepper.
- Fold the creamy cheese sauce through the cooked pasta in the pot and then add the chopped sausages, now pour the mix into a buttered oven dish.
- Sprinkle the buttery breadcrumbs over the Mac n Cheese and bake in the oven until bubbling on the sides – approx. 25-30 mins.
- To serve: chopped chives green salad or green vegetables
