Smashed Taco w Nacho Cheese Sausage
We take the latest smashed taco Tik Tok trend and add the Hellers touch, by using our fresh sausages instead of plain mincemeat in this ultimate sausage recipe....and boy is it tasty!

Ingredients
- 1 pack Hellers Nacho Cheese Sausages
- 4 mini soft tacos
- 4 slices of cheese
- 1/2 white onion peeled and finely chopped
- 2 iceberg lettuce leaves shredded
- Dill pickles
- Burger sauce or make the recipe below for our 'Special Mayo'
- Special Mayo:
- 1.5 cups Best Foods Mayo
- 5 tbsp tomato sauce
- 1 tbsp mustard
- 1 tsp BBQ sauce
- 1 tsp onion powder
- 2 tsp dried dill tips
- 1 tsp brown sugar
- 1 small squeeze lemon juice
- 12 dill pickle slices finely chopped
- Note: you can use any of our fresh sausages for this recipe
Method
To make the Big Mac Mayo combine all the ingredients together in a small bowl and set aside in the fridge until ready. If you can make this a day ahead to allow the flavours to infuse
Cut along the sausage skins and remove the meat into a medium bowl, discard the skins
Place your tacos onto a board and using your fingertips gently press the sausage meat evenly all over the taco shells. Leave about an inch from the side and make sure the meat is about only 2-3mm thick so it cooks through evenly
Heat a large non stick fry pan over medium heat, add a little oil and once hot place the taco meat side down into the pan. Fry for about 1-2 mins. Flip the taco over and continue to cook a further minute with the lid on. Then place on the slice of cheese and cook a further 30 secs with the lid on. Remove onto a tray and cover to keep warm while you repeat this process for the remaining tacos
To serve, place all the tacos onto a wooden board and sprinkle with the diced onion, shredded iceberg lettuce, dill pickles and finish with a few generous dollops of Big Mac Mayo.
To eat fold the taco in half in your hand and try your best not to get it down your shirt!
