Spanish Sausage Salad

Simple Spanish flavours combine to make this deliciosa salad !

Spanish Sausage Salad

Ingredients

  • 1 large Hellers chorizo sausage or 3 small chorizos sliced diagonally
  • 1 red pepper deseeded and cut into strips
  • 6 gourmet potatoes cut in half rounds
  • 12 whole blanched almonds
  • 2 tbsp capers
  • ½ white onion very thinly sliced
  • 1 can cannellini beans, drained and rinsed
  • 25g sharp cheddar
  • 1 small bunch italian parsley destalked and roughly chopped
  • Mizuna or rocket leaves
  • Olive oil
  • 2 tbsp balsamic vinegar or sherry vinegar
  • Sea salt and cracked pepper
  • Lemon wedges

Method

  1. Preheat oven 180C
  2. Line a large oven tray with baking paper. Drizzle generously with olive oil and add potato, red pepper, almonds, and capers. Season well, toss together and place into oven for 20 mins or until the potato is cooked and golden – keep an eye on the almonds and remove if becoming too dark
  3. Fry the sliced chorizo in a pan with a little olive oil. Allow each side to become golden then remove onto a paper towel lined plate
  4. Into a large salad bowl drizzle 4 tbsp or thereabouts of olive oil and the balsamic vinegar. Add the white onions, cannellini beans and baked potato, pepper, almonds, and capers. Add a good handful of salad leaves, parsley, and season well. Then toss together gently and place into serving bowls garnish with crumbled sharp cheddar and a lemon wedge
