Stir Fry Noodles with Chinese Honey Sausage

Stir Fry Noodles with Chinese Honey Sausage

Ingredients

  • 2 nests dried egg noodles
  • 1 tbsp sesame oil
  • cooking oil
  • 1/2 red onion thinly sliced
  • 3cm piece ginger peeled + finely chopped
  • 4 Hellers Chinese Honey sausages cut lengthways then into half moons
  • 2 tbsp soy sauce + 1 tbsp honey combined
  • 100g broccoli finely cut in quarters lengthways
  • 1 red or yellow pepper deseeded and cut into strips
  • 10 button mushrooms sliced
  • 1/2 cup baby corn cut in half lengthways
  • 1/2 cup edamame beans defrosted in hot water and drained
  • 1/2 cup cashews

Method

  1. Boil the egg noodles following the pack instructions. Drain and toss through the sesame oil - place back into the pot and add the lid to keep warm
  2. Heat 2 tbsp of oil over medium heat in a large fry pan or wok and add the cut sausages. Cook for 5 mins until they begin to brown off then toss them through the soy sauce + honey mixture stirring continuously for 1 min. Remove from the pan onto a side plate and wipe out the pan with a paper towel
  3. Reheat the pan over medium heat and add a little more oil. Add the onions for 3 mins. Next add the ginger for a further 1 min then the peppers, mushrooms and broccoli for a further 5 mins or until tender
  4. At this point add a small splash of water say 1/4 cup and the cooked noodles. Toss together until evenly coated and then finish by folding through the cashews and edamame beans
  5. Place onto a large serving dish or individual serving bowls and serve with extra cashews
