Summer Tomato Soup with Bacon

This was the delicious runner up to our Crafty Cooks competition. Margaret Sutherland from Ashburton’s beautiful Summer Tomato Soup is so simple to make and full of flavour – we are lucky to have it to share with you all!

Summer Tomato Soup with Bacon

Ingredients

  • 1kg ripe fresh tomatoes - quartered and core removed
  • 2 white onions roughly chopped
  • 3 garlic cloves crushed
  • 4 cups chicken stock
  • 1 orange cut in half
  • 1 large bunch of basil leaves and extra for garnish
  • 2 tsp brown sugar
  • 1 pack Hellers Crafty Cooks Bacon Strips
  • Olive oil
  • Sea salt and cracked pepper
  • To Serve: basil leaves, cherry tomatoes halved, sour cream and crusty warm bread

Method

  1. In a large pot add a good glug of olive oil and onions and gently fry over medium heat for 5 mins. Add the garlic and fry for a further 3 mins until tender onions are tender, stirring often
  2. Add tomatoes and stir often for 2 mins then cover with chicken stock. Add orange, basil leaves and brown sugar and simmer gently for 10 mins
  3. Remove the orange and discard. Using a whiz blender or food processor puree the soup till smooth. Adjust seasoning and set aside to keep warm
  4. Add 2 tbsp olive oil to a medium fry pan and gently fry off the bacon strips until slightly golden
  5. To serve ladle soup into bowls and top with sour cream, a few cherry tomatoes and fresh basil leaves. Serve with a side of buttery warm crusty bread
