Sweet Chilli Pork Tenders w rice and Asian style veges

Ingredients

  • 6 Hellers Sweet Chilli Pork Tenders
  • 1 pack ready to heat rice
  • 1/3 cucumber
  • 2 carrots peeled
  • 2 tomatoes roughly diced
  • 1 small pack snow peas stalks removed and diagonally sliced into quarters
  • lime wedges
  • black and white sesame seeds
  • Chilli oil
  • Sesame oil

Method

  1. Cook the sweet chilli tenders to the pack instructions

  2. While the are cooking prepare the vegetables. Using a peeler or a sharp knife slice the cucumber and carrots into thin ribbons.

  3. Place the carrot ribbons and snap peas into a small bowl, boil the jug and pour over with boiling water. Allow to gently blanch for 3-4 mins then drain. Toss in a little sesame oil, sea salt, a good squeeze of fresh lime and black sesame seeds.

  4. Place the cucumber ribbons into a small bowl and toss gently with chilli oil and white sesame seeds. You can use an alternative Asian sauce instead of chilli, whatever you have on hand.

  5. Heat the rice to the pack instructions

  6. To assemble place the rice onto one side of the plate and arrange the vegetables and tomato on the other. Place the Sweet Chilli pork tenders on top of the vegetables and serve with extra chilli oil and lime wedges
