Thai Pork Meatball Tasting Platter
INGREDIENTS
- 2 tbsp oil
- ¾ cup natural peanuts
- Sea salt
- 1 pack Hellers Thai Pork Meatballs
- Cucumber cut into strips
- Carrots cut into strips
- Cherry tomatoes
- Fresh herbs – coriander, Thai basil
- Kewpie mayo
- Sriracha mayo
- Your favourite chilli sauce
- Sliced spring onions and sliced fresh red chillies
- Quick Dipping Sauce: ¼ cup soy sauce
- 1 tbsp white vinegar
- 1 tbsp sesame oil
- ½ tsp chilli flakes
- ½ lime squeezed
METHOD
- Add the oil and peanuts to a large fry pan and cook them over medium heat until the peanuts start to caramelise and crack. Sprinkle with sea salt and transfer to a serving dish and set aside
- Add the meatballs to the fry pan and continue to cook over medium heat until caramelised and thoroughly cooked – approx. 10 mins. Transfer to a serving bowl
- To assemble place the bowls of meatballs and peanuts onto a tasting platter, add the dipping sauces which you have poured into small ramekins. Decorate with prepared vegetables, tomatoes, and herbs
- Garnish with spring onions and sliced chillies
