Thai Pork Meatball Tasting Platter

INGREDIENTS

  • 2 tbsp oil
  • ¾ cup natural peanuts
  • Sea salt
  • 1 pack Hellers Thai Pork Meatballs
  • Cucumber cut into strips
  • Carrots cut into strips
  • Cherry tomatoes
  • Fresh herbs – coriander, Thai basil
  • Kewpie mayo
  • Sriracha mayo
  • Your favourite chilli sauce
  • Sliced spring onions and sliced fresh red chillies
  • Quick Dipping Sauce: ¼ cup soy sauce
  • 1 tbsp white vinegar
  • 1 tbsp sesame oil
  • ½ tsp chilli flakes
  • ½ lime squeezed

METHOD

  1. Add the oil and peanuts to a large fry pan and cook them over medium heat until the peanuts start to caramelise and crack. Sprinkle with sea salt and transfer to a serving dish and set aside
  2. Add the meatballs to the fry pan and continue to cook over medium heat until caramelised and thoroughly cooked – approx. 10 mins. Transfer to a serving bowl
  3. To assemble place the bowls of meatballs and peanuts onto a tasting platter, add the dipping sauces which you have poured into small ramekins. Decorate with prepared vegetables, tomatoes, and herbs
  4. Garnish with spring onions and sliced chillies
