Tray Bake Curried Beef Sausages
The good old curried sausage dish is made even simpler with our tasty curried sausages all cooked together in just one pan!

Ingredients
- 2 packs Hellers Curried Beef Sausages
- 30g butter
- 2 medium white onions roughly sliced
- 1 tbsp plain curry powder
- 1 tbsp plain flour
- 1 L beef stock heated
- 1 large kumara cut in half lengthways and sliced 1/2 cm thick
- 1/2 cup sultanas
- 3/4 cup frozen peas
- Parsley or coriander roughly chopped to garnish
- Crusty bread and riata yoghurt sauce to serve

Preheat oven 180C and butter a large deep side oven tray or dish

Fry the sausages in a little oil in a large deep sided fry pan until browned all over and place into the buttered oven dish

Add the butter and onions to the same fry pan and cook until the onions over med-low heat until they soften about 5-8 mins. Stir in the curry powder and flour and allow to cook out for 1 min. Slowly add the beef stock stirring as you go. Simmer together for 5 mins

Place the kumara into the oven tray between the sausages, sprinkle with sultanas then pour over the hot onion curry stock. Place into the oven for 15 mins

Add peas and continue cooking for a further 5 mins

Garnish with parsley or coriander and serve straight to the table with a side of crusty bread and riata yoghurt sauce if you have some on hand
