Ingredients
- 1 pack Hellers Angus Beef sausages
- Olive oil
- 3 large purple kumara washed and cut into wedges
- 10 gourmet potatoes cut in half rounds
- 1 red onion thinly sliced
- 1 red pepper deseeded and cut into strips
- 3 sprigs rosemary broken in half
- Smokey Tomato Mayo:
- 1/2 cup mayonnaise
- 2 tbsp tomato chutney
- 1 tbsp bbq sauce
Method
- Preheat oven 180C
- Line a large oven tray with baking paper. Drizzle generously with olive oil and add kumara, potatoes, red onion, red pepper, and rosemary sprigs. Season well, toss together and place into oven for 20 mins or until the kumara is cooked and golden
- Meanwhile make the smokey tomato mayo by placing all the ingredients together into a small serving bowl and loosely fold to combine
- Cook the beef sausages on the bbq or in a fry pan over medium heat until thoroughly cooked
- To serve place the cooked sausages onto the vegetable tray bake and serve as is for everyone to get stuck in…smokey tomato mayo on the side
