Greek Style Schnitzel

Such a beautiful Mediterranean style meal full of flavour and a golden crunch from our schnitzel

INGREDIENTS

  • Hellers schnitzel
  • Carrots peeled
  • 2-3 sprigs of fresh rosemary
  • Hummus
  • Greek Salad:
  • 1/3 cucumber halved and sliced
  • 2-3 tomatoes cored and roughly chopped or 1/2 punnet cherry tomatoes halved
  • 1/4 red onion finely sliced
  • Generous handful of pitted olives chopped in half
  • 20g feta roughly crumbled
  • Fresh dill or fennel fronds
  • Olive oil + lemon juice
  • To serve:
  • warmed flatbreads, lemon wedges

METHOD

  1. Make the Greek salad by combing all the ingredients into a medium bowl and gently tossing it together wit a small dash of olive oil and a squeeze of half a lemon - set aside to macerate
  2. Preheat oven. Toss the carrots in a dash of olive oil, sea salt and the rosemary
  3. Bake [or use air fryer] the schnitzel and carrots together on a lined baking tray until thoroughly cooked and golden
  4. Spread a large spoonful or two of hummus onto each plate and top with schnitzel and Greek salad
  5. Serve with baked rosemary carrots, lemon wedges and warm flatbreads
