Korean Pulled Pork and Chive Dumplings

INGREDIENTS
- Makes 20-24
- 1 pack Hellers Pulled Pork
- 60g fresh chives chopped
- 1 pack dumpling wrappers
- To serve:
- extra chopped chives
- chilli oil
- soy sauce
- mayo optional
METHOD
- Start by removing the pulled pork from the packet and place into a microwave bowl, cover with a paper towel and heat for 2 mins. Drain any excess water away and using a fork break up the pork. Fold through the sauce from the packet and the chopped chives
- To make the dumplings you will need a tray lined with baking paper to place them on as you make them, a small bowl of cold water, a chopping board, the wrappers and a tablespoon to scoop out the mix
- The best way to understand how to make a dumpling is to look it up as a video tutorial - especially if you have kids helping you and you want to experiment with different shapes. The most basic way is to place the wrapper onto the chopping board, place a tablespoon of filling into the centre, using your finger dip it in a water [not too much] and moisten the edges of the wrapper, then fold the wrapper in half to create a half circle, pressing the edges together to seal the filling - make sure you get any air out of the centre as you seal it. Repeat the remaining wrappers and place on the tray as you go
- Simmer the dumplings in a large pot - you don't want a rapid boil as this may break up the dumplings just a medium boil. Simmer for a few minutes till tender then remove with a slotted spoon into serving bowls
- Serve immediately with soy sauce, chilli oil and a sprinkle of fresh chives
