Chipotle Chicken & Roasted Kumara Lunch Bowl

Ingredients
- 1 kumara washed and cut into thin rounds
- ¼ cos lettuce roughly chopped
- ¼ pack Hellers Chipotle Chicken Sliced
- ¼ cup corn kernels
- 4 cherry tomatoes halved
- ½ avocado peeled and chopped
- Olive oil
- Sea salt
- Dressing of your choice on the side in a separate container
Method
- Preheat oven 180C
- Drizzle olive oil onto a lined baking tray and toss the kumara slices in it. Sprinkle wit sea salt and bake in the oven for 15-20 mins until tender and caramelised
- Place all remaining ingredients including chipotle chicken slices into your lunchbox and top with kumara slices once they are cooled
- Pack your lunchbox with your favourite dressing in a separate container and then simply drizzle it over when you are ready to eat
