Ingredients
- 10 rashers Hellers Streaky Bacon
- 2 sheets frozen puff pastry, defrosted
- 10 eggs
- 250g crème fraîche, room temperature
- 1 cup baby spinach, roughly chopped
- 150g cherry tomatoes, halved
- ½ cup grated cheese
- 1 spring onion, thinly sliced
- tomato relish
Method
- Preheat your oven to 180°C fan bake. Line a greased pie dish with the puff pastry
- Whisk together eggs and crème fraîche until well combined. Season with salt and pepper
- Add spinach, tomatoes, cheese and spring onion. Stir to combine then pour into the pastry lined pie dish
- Place in the oven to bake for 20 - 25mins or until the egg mixture is mostly set
- Remove from the oven and increase the oven temperature to 200°C
- Arrange the Hellers Streaky Bacon on top of the pie in a lattice pattern
- Bake for a further 15 - 20mins or until the bacon is crispy and the pie is cooked through, covering with foil if the edges brown too quickly
- Allow to rest for 5 mins before slicing and serving with tomato relish
