Ingredients
- 6 white onions
- 1/2 cup oil
- 1 tbsp each fennel seeds, rosemary and thyme
- 1 tbsp butter
- 3 garlic gloves, thinly sliced
- 4 sprigs sage leaves* removed and chopped
- 1 400g pack of your favourite Hellers bacon
- 1 cup defrosted peas
- 2-4 sheets flaky pastry
- 3 tbsp tomato relish - plus extra to serve
- 10 eggs (5 for custard/5 to crack into pie)
- 2 tbsp fresh chives chopped
- 1 tbsp wholegrain mustard
- 125g soft full fat cream cheese
- 3/4 cup grated tasty cheese
- 1 egg to glaze pie
*Note – if sage leaves are out of season then substitute with 1 tbsp dried rubbed sage leaves.
Manuka Smoked Middle Eye Bacon
The eye is selected from the Middle Loin and provides a leaner and smaller rasher of bacon. It is best cooked in a medium hot pan or under a hot grill and is an ideal size for homemade Eggs Benedict, or served as a whole rasher for a weekend brunch.
