Ham Tacos

Ingredients

  • 8 small soft-shelled tortillas
  • 1 pack Hellers Ol Smokey Ham off the bone roughly chopped
  • ½ can corn kernels drained and rinsed
  • 1 avocado skin removed and roughly chopped
  • 2 spring onions finely chopped
  • 80g low salt feta cheese crumbled
  • 1 cup fresh pineapple finely chopped
  • To serve:
  • Fruity spicy Mexican sauce – shop bought
  • Fresh coriander leaves
  • 2-3 Lime cut in half
  • Jalapenos

Method

  1. Chargrill the tortillas over a gas bbq or in a fry pan to soften and blacken slightly
  2. To assemble either have all the ham taco ingredients served onto a platter for guests to help themselves or pack each taco with ham, corn, avocado, spring onions, feta, and pineapple
  3. Serve with your choice of a Mexican spicy fruit style sauce, coriander leaves, fresh limes, and jalapenos for those wanting an extra kick
