Jalapeno + Cheese hotdogs with Pico de Gallo

INGREDIENTS

  • 1 pack Hellers Jalapeno + Cheese Loaded Hotdogs
  • 4 small ciabatta rolls
  • Pico de Gallo
  • 6 roma tomatoes deseeded and diced
  • 1/2 white onion finely chopped - leave to soak in cold water 5 mins then drain
  • 1/2 large green capsicum deseeded, finely diced
  • 6+ brined jalapeno slices finely chopped - more to taste
  • 1 lime juiced
  • fresh coriander leaves to taste

  • To serve:
  • grated cheese
  • mayo or sour cream
  • extra limes and jalapenos slices

METHOD

  1. To make the Pico de Gallo place al the prepared ingredients into a bowl and toss together well. Allow to sit and macerate in the fridge until you're ready to use it
  2. Heat up your BBQ
  3. Cut the ciabatta rolls lengthways along the top and brush w olive oil
  4. BBQ the loaded hotdogs over medium heat till thoroughly cooked
  5. Sear the ciabatta rolls cut side down on the BBQ till nicely charred
  6. To assemble place a spoonful of pico de gallo into the cut bun, add the hotdog and then generously top with more pico de gallo
  7. Serve with sour cream or mayo and the remaining pico de gallo, extra limes, grated cheese and sea salt to taste
