- 3 large golden kumara washed and cut into wedges
- 3 red apples cored and sliced into wedges
- 1 white onion thinly sliced
- 1 small bunch sage leaves include stalks
- Apple Cider Vinaigrette:
- 3 tbsp apple cider vinegar
- 1/4 cup olive oil
- 1 tsp honey or maple syrup
- ½ tsp Dijon mustard
- 1 smashed garlic clove skin removed
