Kumara, Apple and Sage Tray Bake with Pork Sausages

Kumara, Apple and Sage Tray Bake with Pork Sausages

Ingredients

  • 1 pack Hellers Country Pork sausages
  • Olive oil
  • 3 large golden kumara washed and cut into wedges
  • 3 red apples cored and sliced into wedges
  • 1 white onion thinly sliced
  • 1 small bunch sage leaves include stalks
  • Apple Cider Vinaigrette:
  • 3 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 1 tsp honey or maple syrup
  • ½ tsp Dijon mustard
  • 1 smashed garlic clove skin removed
  • ¼ tsp sea salt
  • To Serve:
  • Rocket leaves optional

Method

  1. Preheat oven 180C
  2. Line a large oven tray with baking paper. Drizzle generously with olive oil and add kumara, apple, white onion, and sage. Season well, toss together and place into oven for 20 mins or until the kumara is cooked and golden
  3. Meanwhile make the apple cider vinaigrette by whisking all the ingredients together except the olive oil in a small bowl. Drizzle in the olive oil while whisking and continue to whisk until the dressing is emulsified. Alternatively, combine everything in a jar with a tight-fitting lid and shake to combine
  4. Cook the pork sausages on the bbq or in a fry pan over medium heat until thoroughly cooked
  5. Place the cooked sausages onto the vegetable tray bake and sprinkle over with rocket leaves. Serve for everyone to help themselves along with the apple cider vinaigrette
